Easy Entertaining

We had the most unbelievable weather this weekend, just in time for Alice's visit. Today - and all week - it's back to clouds, rain, and 60 degrees, so I feel extra blessed that the four of us got to spend our time together out back talking, drinking, eating, and talking some more.






 








Menu

Since I knew the weather was going to be beautiful and I knew about all of the inevitable talking, I planned our weekend menu out in advance to be easy and fast. Despite all that, we still ate dinner around 8:30p thanks to all the chatter, but I had built in an appetizer so it was fine.

I used Alice's visit as a great excuse to consult all of those loose recipes from Everyday Food that I've ripped out over the past year and haven't added to my binder yet. I've had various food magazine subscriptions over the years and by far Everyday Food is the only one worth reading. The recipes are very short (no rounding up 20 different ingredients) and extremely delicious. If you need some easy monthly recipes, spend the $12 and get yourself a subscription. The magazine is small, has almost no articles, and gets right to the point.

We had one dinner and one breakfast together, and I did a lot of the prep work ahead of time to expedite the process.


Appetizer - Cucumber Feta Toasts
Oh my god. I will never make another summer appetizer ever again. These had 5 ingredients and were so easy and delicious that I'm fairly certain I alone ate half of that plate. I made the feta mixture ahead of time, using more olive oil and lemon than the recipe called for, and B did the rest when it was time.




Salad - Organic romaine hearts, chopped pear, crumbled Gorgonzola, chopped walnuts, homemade vinaigrette

Main Course - Pasta with Roasted Vegetables and Arugula (we used spinach instead)
I was moving a little too fast when I was making this Saturday night and forgot to add the spinach and the cheese and it was still delicious. This picture is from Sunday night when we had the leftovers, but remembered to add the missing ingredients. I had roasted the vegetables earlier in the day, so putting this together was super fast.




Breakfast - Scrambled eggs, turkey sausage (much quicker and neater than bacon), and Blackberry Puffs

My puffs aren't nearly as pretty as the ones in the magazine, but they were delicious. They were the perfect bread/fruit addition to breakfast and weren't too sweet. It's puffed pastry filled with marscapone cheese and crushed blackberries. Once again, I ate way too many.




I was really happy with how the menu worked out. We got to try new recipes, cook great food for our guest, and have zero stress and very little time in the kitchen. How about you - any simple, delicious, go-to recipes that you whip out for company? If so, let me know in the comments!

Friends & Family

We spent the weekend with all kinds of lovely people in Rochester and Buffalo and today Charlotte and I are unpacking, repacking, and then heading up north to get in a little quality time with some rarely seen family members.  Eye candy below!

Gal pals

Feather Nester popped up from the great state of Tennessee for a visit this past weekend.  It was the first time we've had gal to gal time in yeeeeears, so it was great to just sit around in our jammies and chat. Plus it gave B some guilt-free golf time, so it was a win-win.



Saturday night we got our fancy on and headed to a tapas restaurant for drinks and dinner.

We let Feather Nester sleep in to almost noon since she probably hasn't done that in years, so "breakfast" is a term I use loosely.



More fun times on the carousel. Much like last time, Charlotte loved it... as long as it wasn't moving.  It only took about one rotation for her to dive off her horse into B's arms.

Social Butterflies

Sorry for the absence, we've been busy playing with friends and family. Ouiser flew up from Nashville so that we could spend absurd amounts of time on my couches talking from sun up to sun down. Really. We never left the house and it was completely awesome.

I didn't feed anyone last weekend so they were forced to fend for themselves.



Yesterday and today we're visiting with my mom and grandmother and then tonight we leave for Rochester to see our friends and Charlotte's future boyfriend. See ya next week!

We're gettin the band back together!

Two weekends ago the First Annual Tar Beach Golf Tournament occurred and it was a rousing success! Friends and family drove and flew in for the event and it was an amazing weekend of dinners, golf, babies, great conversation, a little alcohol, and a lot of laughter.

Almost 4 years ago (New Year's Eve 2005) Tar Beach Band played their last public show and the crazy, difficult, magical era of a group of engineers and math nerds who quit their full-time jobs to pursue music ended. And because it was that courageous decision to tour around the country that I met my husband and we took our first step towards the incredible life we share today, I always feel especially nostalgic about Tar Beach and the time they spent together.

As a testament to their incredible friendships, all of the members and band wives remain good friends to this day. The vintage t-shirts are gone, as is the long hair, but they have been replaced by equally hip items like Nike moisture-wicking golf shirts, 401ks, and children.

Back above the Mason-Dixon

Hi all. We're back from our wonderful trip to Tennessee and trying to get into the swing of things again. Lots to do around here by the end of the month! Posting may get lighter as the month goes on.

Our weekend with the Feather Nesters and Ouisers was soooo wonderful. Happy, relaxing, entertaining (thanks to the little ones), funny, and warm. The trip was SO good that I don't have one single picture to show for it - not one. Ouiser has some good ones from our trip to the zoo, so when she gets the time to send some of those I'll put them up. Of course, she'll have to weed through the ninety pictures of aquarium fish that B put on her camera, so it may take a while.

I wish there was some way to entertain you with stories about the girls, but it's really something that needs to be done in person. Let's just say that a weekend with a 1 1/2 year old and a 2 year old can be really funny.

Sorry to be MIA, but you're gonna have to wait a little longer. I've been struck down with a vicious sinus cold and haven't gotten off the couch in 2 days. Want to know what I've learned? That you can watch Saved by the Bell at pretty much any time of the day if you're so inclined.

Year Round Jack O' Lanterns

Since I'm still dealing with life without a computer and a Blackberry that suddenly won't receive email, I have about two minutes to devote to you before B leaves for work and takes both the car and the computer. Do you remember Film Guy? He's Dino Girl's boyfriend and the co-host of every single great party we've gone to in the last three years here. Well, he's finally put his passion into a blog!

Year Round Jack O' Lanterns is an extremely niche blog about horror movies, and yet it's so well written and with such passion that I'm a regular reader. And if you had ANY IDEA what a movie wimp I am, you'd know that I've pretty much never seen even the most main stream of horror movies and certainly not all of the specialized ones that he talks about. However, I still find myself reading with great interest. It's always interesting to read an expert's take on a field you know nothing about because it's basically like going to film school for five minutes every day.

Ouiser on MSNBC!

Ouiser is famous!! She's been doing a hell of a job lately volunteering for the Nashville democratic party and she continued that effort today by getting up at 3:00am to get the word out this morning and then went back this evening with Mr. Ouiser to stand at the MSNBC tent. She called us 20 minutes before Chris Matthews started and said that they were in the front row, so we stood two feet from the TV vigilantly watching the audience....




UNTIL WE SAW HER!!!!! B did an excellent job of catching some screen shots...





Yeah Ouiser!!! We're so proud to say we know you!! Don't forget us when they offer you your own show.

Welcome, Travelers!

We've taken another one down! I'm happy to tell you that Marissa has joined the blogosphere - horray! This Thursday, she and her husband Mike leave for France to celebrate a friend's birthday and they will be living the high life in a French chateau for a while. But in true Mike & Marissa style, they will be wired the entire time.

They'll use the blog to update daily while they're in France and then as a general travel blog to document their many trips once they return. Go visit them here: The House of M.

Bridal shower & bachelorette party

Where do I even begin?? This will probably be long, so brace yourself. This past weekend was the double party extravaganza of the bridal shower and the bachelorette party. I knew absolutely nothing at all about the entire weekend and I was so busy getting the house ready for everyone's arrival and keeping up with daily life that I had no time to think about what was ahead.

Friday Night
Because the shower was early on Saturday (11am) a bunch of the girls came to the house on Friday to spend the night. We had a completely full house and it was wonderful - me, my mom, Bryan's sister, Z, Ouiser, and Feather Nester.

When B and I were buying our dining room table a few years ago I stood in the store looking at it and tried to picture Thanksgiving dinners with our families, and nights of laughter and wine with my girlfriends. Growing up with a large extended (Italian!) family, stories around the dining room table over laughter and wine is such a crucial party of life that I felt like we needed a great space to do that. I wanted the chairs to be the kind you can sit in for hours and never want to leave.

That was just how it was on Friday night and it was truly a dream come true. We sat at that table from 6pm to midnight and never moved. We laughed and told stories for six hours and it was heaven - everything I could ever want out of life. All of my friends (and family) are so spread out, that to have some of them all together, relaxing for an entire evening was a simple pleasure that I will remember forever.

Saturday - daytime
Despite having that many women in one place, thanks to careful pre-planning, we were able to get ready and get all of us out of the house by 9:15am. We arrived at the shower early so the girls could set up and I got to watch as they kept setting out one fun thing after the next.

The shower was at The Rose Garden tea house in Binghamton and it was so precious - high ceilings, pink walls, tea cups everywhere. Very girly and sweet and perfect for a bridal shower. There were about 20 people there and we had lunch and then started the games and gifts.

We played a great game that made the gift-opening part of the shower much more tolerable. Not that getting gifts isn't great, but there's something strange about opening gifts while everyone has to watch. You get worried that everyone is so bored. But the girls conspired and had asked B all kinds of questions beforehand and had them all written out on cards. When the gift you gave was being opened, you read the question and I had to guess what his answer would be. It was very funny and a great way to keep everyone involved.

We received all kinds of wonderful gifts from the registry that I'm very excited to go home and use. And again, the whole process is a little surreal so I'm sure I have all kinds of cool presents that I forgot about. One of the few off-registry gifts was this amazing idea from my aunt that I fully intend to steal it! She spent the last year buying little decorative gifts (hand towels and other small things) for every holiday - Easter, St. Patrick's Day, July 4th, etc - and gathered them all together in a big Tupperware container. Such a cool idea!

At the end, we went outside and did the sweetest Puerto Rican tradition that Z brought the stuff for. There is a big decorated umbrella with tons and tons of confetti inside. The bride is holding it by her side and then she opens it and raises the umbrella above her head so she is "showered" with well wishes! I think there are some great pictures, but I don't have any yet, so you'll have to wait. There were so many great details from the shower, the favors and scrapbook and other fun stuff, that I can't wait to show you pictures of.

After that, we hustled into the cars and drove down to the Beacon train station to take the train into the city.

Saturday Night
God... how do I properly convey what happened on Saturday night? Again, I knew nothing, and again, the girls went all out. It blows my mind how much time and thought went into planning this weekend. There were so many logistics to figure out and so much to set up - I spent the whole weekend just feeling so loved.

Saturday night we pre-partied in our hotel rooms for a little while where I got yet more gifts - a tiara, a feather boa, some "love cuffs," a list of tasks I had to try to accomplish throughout the night, and some very cute little bride goodies from Victoria's Secret. After that it was time for our dinner reservation and I found myself at a place called Lucky Chengs - Drag Queen Dinner Theater.

Again, I just can't possibly explain what went down in those four fabulous and hysterical hours. I'll give it a go and when I see you at the wedding, let me know if you want the saucier details :)

After having a few drinks upstairs, our table was ready and we went into the basement to get ready for our show! There were two main bachelorette parties and then two smaller ones. We got to see a little drag show, hear our hostess insult the crowd and got served drinks in huge bowls with lots of straws.

After that it was time for the humiliation to begin... my devious girls bought me a "lap dance" from one of the performers and I was brought up on the stage, put in a chair and then given the craziest lap dance and tossed all over the stage. It was like a roller coaster ride - so crazy and so fast that I had no idea what was going on. I just kept looking at our table and everyone had the funniest expressions on their faces. Let's just say that my shoulder is bruised from the performance and I spent most of the day yesterday saying "can you believe that lap dance!!!" It was awesome.

I know we ate dinner in there somewhere, but it was so dimly lit and there were so many other things to watch that I barely recall eating. The other highlight of the night was when they called the 4 bachelorettes up on stage for a contest - the contest was to see who could give one of the "girls" the best lap dance. I was the third to go and spent the first two performances thinking "oh my god, I want to die, how am I going to do this?? I used to love this - I spent all of Feather Nester's bachelorette party dancing on a bar!"

But then I knew I had to beat Elise. Elise was 90lb bride from New Jersey who was all about herself - such selfish behavior is apparently what trips my very slight competitive lap dance urges and I "brought it." After the votes from the audience where some of my girls lost their voices and I saw more than one of them standing on chairs and pounding the table, it was called a draw. However, I feel I secretly won because as soon as the contest was over, the performer pulled me to the side and said "Girl! I feel like I know so much about you know! I have never had a show like that!" Oh yeah.... I totally won.

After that, our night at Lucky Chengs drew to a close. The were offering karaoke, but we passed. I refuse to sing in public - I consider it a public service that I'm providing by not singing. However, it did lead to the absolute funniest quote of the entire weekend when I told Feather Nester that there was no way I was going to sing karaoke and she replied "You licked a drag queen but you won't sing karaoke?!!!?" Correct. (For the record, it was her cheek - don't let your minds spin out of control)

Once the main part of the night was done, we wanted to go dancing. So we hit up Coyote Ugly for about ten seconds until we saw that it was much different from five years ago. When we were there for Feather Nester's party, it was all good fun, just girls dancing on the bar to 80s music. Well now it's disgusting and they were making girls take their shirts off, hand over their bras, and then making them dance on the bar in Coyote Ugly t-shirts. So we put down our drinks and left immediately.

But thanks to one of the girls who lives in NYC, we found a great place to dance and ended the night dancing and then eating breakfast food at the 24 hr. diner under our hotel. By 4am, we were all snug in bed.

So that's it. I'll be sure to post pictures as soon as I get them. And a HUGE thank you to all of my wonderful friends and family who spent so much time to give me an incredibly special and fun weekend - it was truly one of the best weekends of my life.

"Desiny"

What the heck is "Desiny," you ask? We'll get to that later. First some pictures from the 70s Disco party we went to this weekend in Rochester...

We had the most wonderful, relaxing weekend in Rochester with D & Z. It was Z's birthday on Saturday night, so we went to a fundraiser called Ugly Disco. Most of the girls there clearly had decade confusion as they were all in white go-go boots, printed mini dresses, and wide headbands. And if you forget your Austin Powers trivia, that was the 60s, not the 70s.

Then on Sunday we did what can only be described as the world's best activity - we sat on patio furniture in their back yard and just visited and grilled for most of the day. Heaven! It was such a rejuvenating day and we really needed it to refuel.

On a separate note, we picked up our wedding rings today. And although it made our savings account sad, it initially made us very excited. That is, until I realized there was a spelling error on my ring. A SPELLING ERROR engraved in platinum!! What the hell?!!

The engraving we chose was supposed to read "Destiny Love Laughter 6.21.08" We thought it really summed up how we feel about each other and what's important to us. B's ring looked great, but after staring at my tiny letters for a while, I realized that there was a problem. So tomorrow morning they go back to be fixed. Sigh...

Lots of cleaning this week as we get ready for a packed house on Friday - 5 gals! All in preparation for Saturday's bridal shower and bachelorette party. B is headed home to Albany to play 36 holes, so he'll be in man-Heaven.

Back from Music City

We're back! I'm sitting on our couch writing this instead of getting ready for work because the baggage handlers in Philadelphia forgot to put 90% of the luggage on the flight, so all of it is being driven around and dropped off this morning. A slight inconvenience, but in this day and age of terrible air travel stories, it's really not that bad.

But let that be a reminder to you - never put your car keys in your checked bag, always carry them or give them to your wife to put in her purse! We were counting our blessings over and over that we had our keys and were at least able to get home.

Our trip to the great state of Tennessee was wonderful. And for those who haven't met them, or haven't seen them in a while, let me assure you that the Dickson babies are adorable! I don't have any pictures, but I will once Ouiser and Feather Nester get a chance to send them to me. Baby L has cheeks and smiles for days and is just like a little china doll, and little S is so happy and loving and sweet natured. The very best is when S walks up to L and says "Be-by!" in her little excited high-pitched voice - SO cute!!

Our days were spent relaxing with babies and golf, and in the evenings we got together for some drinks. And maybe if you're really nice to Ouiser, one day she'll post the hysterical videos of people playing Nintendo Wii boxing in her living room!

Then yesterday, our last day, Ouiser gave B and I an amazing tour of Nashville. What a beautiful city! So clean and well laid out - plenty of culture and things to do. It really is an up-and-coming city like they say it is. We saw the Parthenon, the Ryman, went to the Farmer's Market, and ate pulled pork - it was great.

Gonna go look out the window and check on our bags now...

Saturday Alone... And 12 Days of Cookies - Day 9

B has taken off to Philadelphia for a beer pong tournament - yes, you read that right - so it's just me and the kitties this weekend. B's friends from college have lots of time and money on their hands and therefore do things in very grand style. Visit ponggods.com if you'd like to entertain yourself with the crazy details of this little tournament. There was a block of hotel rooms, a shuttle, ranked seatings, brackets of play, very specific rules, a registration fee, etc. They're ridiculous. Oh, and if you're dying to know what "uniform" (AKA: matching t-shirts) B and his best friend S will be wearing, feast your eyes on this:

I haven't received the latest cookie email, but if I do, I'll post it. Otherwise I'll just be here working on wedding stuff.

Movie Trivia - I'm sitting here watching What About Bob and realized that the daughter is Kathryn Erbe of Law & Order: Criminal Intent. Oh my gosh!!! Did you all know that?? I know there are some movie buffs who read this, so I was just wondering.


Peanut Butter Nanaimo Bar
There are a number of stories as to where this cookie came from. It's thought to be native to Nanaimo, British Columbia (hence the name), and it gained widespread popularity in the 1950s. Whatever its origins, we loved it. We added the twist of peanut butter to make a simple, delicious, no-bake bar cookie that's super kid-friendly and freezes well.

Cookie:

  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup sugar
  • 1/3 cup cocoa
  • 1 large egg, beaten
  • 1 3/4 cups graham cracker crumbs
  • 1 cup shredded sweetened coconut
  • 1/2 cup finely chopped blanched almonds

Peanut Butter Filling:

  • 1/3 cup unsalted butter, softened
  • 1/3 cup peanut butter
  • 1/2 cup confectioners' sugar

Chocolate Glaze:

  • 4 ounces semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter
Line an 8 by 8-inch baking pan or casserole with aluminum foil, with long flaps hanging over each edge.

For the cookie: Put the butter in a heatproof medium bowl. Bring a saucepan filled with an inch or so of water to a very slow simmer over medium-low heat. Set the bowl over, but not touching, the water. Once the butter is melted, add the sugar and cocoa, and stir to combine. Add the egg and cook, stirring constantly with a whisk, until warm to the touch and slightly thickened (it should be about the consistency of hot fudge), about 6 minutes. Remove from the heat and stir in graham crumbs, coconut and nuts. Press the dough firmly into the prepared pan. (Save the pan of water for melting the chocolate.)

For the filling: Beat the butter, peanut butter and confectioners' sugar together in a medium bowl with an electric mixer until light. Spread over the cookie and freeze while you prepare the chocolate glaze.

For the glaze: Put the chocolate and butter in a medium heatproof bowl, and set over the barely simmering water. Stir occasionally until melted and smooth. Remove from the heat and let cool slightly. (Alternatively, put the chocolate and butter in a medium microwave-safe bowl. Melt at 50 percent power in the microwave until soft, about 1 minute. Stir, and continue to heat until completely melted, about 1 minute more.). When cool but still runny, pour the chocolate layer over the chilled peanut butter layer and carefully smooth out with an offset spatula. Freeze 30 minutes.

To serve, remove from the freezer and let sit at room temperature for 5 minutes. Pull out of the pan using the foil flaps and transfer to a cutting board. Cut into 1-inch squares with a sharp knife. Serve cool or at room temperature.

Busy baker's tips: Finished bars can be wrapped in the pan in plastic wrap, then aluminum foil and frozen for up to 1 month.
